Beef Processing Instructions
Steaks:
- Included are Sirloin, T-bone, Rib (specify thickness and quantity in package – Standard ¾”)
Roasts:

- Included are Chuck, Arm, Sirloin, Tip (specify size – Standard 3-4 lbs.)
- Grind into hamburger
Round:
- Choose 1 on a ¼ beef and up to 2 on a ½ beef
- Tenderized – (a.k.a. Minute Steak, Cube Steak)
- Round Steak
- Dried Beef – Smoked and Cured, fully cooked, 1 lb. vacuum package
- Grind into hamburger
Short Ribs:
- *Short ribs are included with order
- Grind into hamburger
Brisket:
- *Brisket included with order
- Grind into hamburger
Trimmings/Grinding:
- 15 pound minimum for each product
- Ground Beef – 1 lb, 1 ½ lbs, or 2 lb. packages
- Patties – 1/3 lb. = 6 /package, 1/4 lb. = 8 package
- Beef Snack Sticks – approx. 1 lb. vacuum package
- *Soup bones will automatically be included with your order.
