Beef Processing Instructions

Steaks:

  • Included are Sirloin, T-bone, Rib (specify thickness and quantity in package – Standard ¾”)

 

Roasts:

    • Included are Chuck, Arm, Rump, Tip (specify size – Standard 3-4 lbs.)
  • Grind into hamburger

 

Round:  Choose one option on a ¼ beef and up to two options on a ½ beef

  • Tenderized – (a.k.a. Minute Steak, Cube Steak)
  • Round Steak
  • Dried Beef – Smoked and Cured, fully cooked, 1 lb. vacuum package
  • Stew Meat – 1 lb. package or 2 lb. package
  • Grind into hamburger

 

Short Ribs:

  • Keep Short Ribs
  • Grind into hamburger

 

Brisket:

  • Keep Brisket
  • Grind into hamburger

 

Trimmings/Grinding:

  • 15 pound minimum for each product
  • Ground Beef – 1 lb, 1 ½ lbs, or 2 lb. packages
  • Patties – 1/3 lb. = 6 /package, 1/4 lb. = 8 package
  • Beef Snack Sticks – approx. 1 lb. vacuum package
